Overview
Cook with a NYC local that grew up Italian and has been cooking Italian food her entire life. Mary is an expert at jarring tomatoes, making fresh pasta and sauces like pesto, marina, Cacio e Pepe and clam sauce. You will learn these new recipes at this Greenwich Village home with lovely skyline views and may be able to dine on the roof. This is a hands-on class, but customizable for those that would prefer to take more notes and enjoy the sit down meal. Most of the ingredients are purchased from the Union Square Farmer's Market where all the best NYC Chefs shop.

Fresh mozzarella, basil, olive oil, tomatoes and good crispy bread. We will sample some olive oils.
LINGUINE WITH PESTO
WE WILL MAKE FRESH PESTO WITH PINE NUTS, BASIL, GARLIC AND OILVE OIL USING TWO TECHNIQUES, YOU GET TO BE THE JUDGE
FRESH TOMATO SAUCE OR CLAM SAUCE
DEPENDING ON THE SEASON WE WILL MAKE EITHER TOMATO SAUCE FROM LOCAL TOMATOES AND YOU WILL LEARN JARRING TECHNIQUES TOO OR WE WILL MAKE LINGUINI WITH CLAM SAUCE USING WHOLE FRESH CLAMS IN A SAUCE WITH GARLIC, PARSLEY AND WHITE WINE
