Overview
Would you like to explore Japanese tradition more deeply through fermented foods—learning about their history and health benefits?
A certified instructor will guide you through easy recipes using traditional Japanese fermented ingredients, with an in-depth lecture in a small-group setting. (Max: 6 people)
Very convenient: Our kitchen is located in the heart of Tokyo (2 mins walk from Akasaka Mitsuke Sta.), so you won’t be affected much by the weather—even during the extreme summer heat! Plus, it’s an open, modern space with a nice view.
The class is just 2 hours long, making it perfect even for busy travelers!
Amazake has long been enjoyed in Japan as a way to stay energized during the hot summer months. Won't you try it in this class?
Special Promotion : We have another class, "Fermented Food Lunch Class" from 11am. If you take both lunch and dessert class on the same day, we give you a special gift (rice koji amazake which is used in the dessert class. Very delicious!).

Did you know that Japan has the highest life expectancy in the world, and Japanese fermented foods are one of the secrets of Japanese people's health, unique culture and history?
Fermented foods have many beneficial effects, such as improving gut function, enhancing skin health, and helping to maintain overall well-being.
We use Amazake (traditional fermented rice paste, very sweet without sugar) and Sakekasu (Sake lees, which may be rare outside Japan). They are good for glowing skin and gut health, and so delicious!(Note: Sakekasu contains alcohol 8%). And all dishes are vegan.
Why not enrich your trip to Japan by learning about fermented foods, the foundation of Japanese cuisine and a key to health and beauty?
Note: The menus may be changed depending on the season and availability.
FYI, our regular kitchen is in Akasaka Mitsuke, which is near Akasaka Hie Shrine which is famous for its many rows of torii gates like Fushimi Inari Shrine of Kyoto. It will be nice to visit there before or after the class!
