- Tortellini in broth or filled with pumpkin, with balsamic vinegar and a sprinkling of Parmigiano Reggiano, they are the first course par excellence in Modena;
- Crescentine Modenesi: also known as “tigelle”, they are a typical Modenese focaccia, made with a mixture of flour, lard, yeast and water. They are filled with cold cuts;
