Wasabi in Amagi The Amagi region in Izu is one of Japan’s most renowned wasabi-producing areas, thanks to its clear spring water and cool mountain climate. High-quality wasabi, especially the prized Mazuma variety, is cultivated here. It is known for its fresh aroma and refined, deep spiciness—characteristics unique to authentic Japanese wasabi. Wasabi in Amagi is traditionally grown using the “tatami-ishi” (stone terrace) method, and takes over a year to mature in pure mountain streams. The wasabi fields themselves are a scenic sight, drawing many visitors. You can taste freshly grated wasabi on-site and enjoy local specialties like wasabi pickles and even wasabi-flavored ice cream.
