- Four freshly shucked oysters that are matched to four award winning Swift Sparklings
- 1st tasting: Brut sparkling wine and a pure oyster.
- Private behind the scenes tour of the oyster tank
- 2nd tasting: Sparkling Rosé, paired with an oyster with Banksia and bay leaf oil
- 3rd tasting: Vintage Sparkling, paired with an oyster with a vinaigrette & pickled magnolia flowers.
- 4th Tasting: Blanc de Noir, paired with an oyster with homemade ponzu.
