The Tunisian chapati is a type of sandwich originating from Tunisia. It consists of a flat round tabouna-like bread, and usually a filling of turmeric omelet, flaked tuna, potatoes, harissa, olive oil as well as onions and minced parsley and sometimes cheese. Once filled, it is closed and then heated so that the ingredients release their flavors inside the bread. There are two types of chapati: the classic chapati found mainly in the capital Tunis and in the north and the so-called Mahdia chapati, present throughout the Sahel region. The latter is not round but has a shape similar to a calzone. In addition to its shape, the ingredients that make up the dough are also different from its northern Tunisian version. You can recognize the dough by its sticky texture.
